Mine Rough
why do my choc.fudge brownie sometimes cook with a rough texture on top instead of a smooth & glossy look?
it's a 'Mary Berry' recipe, so quite easy to do. The finished brownie should be smooth, glossy and slightly cracked on top but most of mine have a rough, dull texture to them.....help please...;-P
I'm positive I know the answer. I had to look the recipe up as I was not familiar with this particular one, but then I saw that it called for 1 cup of margarine (8 ounces), and so I figured that you most likely used a spread instead of a real margarine.
Most people do not even realize that there is a difference and so they erroneously call spreads margarine. There were very few spreads in the market prior to 1992, but then that all changed when almost all margarines became spreads, but the companies did not advertise this change nor did they make consumers aware of this in any way.
I found out by a batch of brownies. I had been making the same brownie recipe since 1970. One day I decided to make some for my family and they were the most dry and awful things I had ever made! I couldn't figure out what was wrong with them as I had used the exact same ingredients I had always used. So I made another pan and got the exact same results again! Brownies not fit to eat.
A couple weeks later our local paper's food section had an article concerning this very issue and said to beware as the new spreads on the market could not be used for baking. Okay! that is why my brownies turned out so awful! I was MAD! I felt like I had been cheated and ripped off since I had wasted good money on a junk product besides all the time and ingredients wasted on 2 pans of brownies!
I contacted the companies who had made the margarine I had always bought (Parkay and Blue Bonnet), and I recieved the most ridiculous form letters back from each company telling me that consumers were looking for healthier and lower fat products and so they were changing for this demand. They also enclosed coupons. Whatever. I wrote them back and told them the only health they were worried about was their bottom line as it cost much less to make spreads since they were watered down inferior products! I also told them I would NEVER buy their products again, and I have not. I started to only buy real butter and Land O' Lakes Margarine as it continues to be a high-quality and good product that gives superior results. This is the only margarine that I have found that gives me the same superior results as butter.
You might also check oven temperature by investing in a cheap oven thermometer, and you might also make sure you did not overbake your brownies, but I am sure it is because you used a spread.
